And – would it be possible to set a delivery date for the gift email? E.g. Dec 24th?

Sorry, no, no way to delay the email. That said you could use your own email in the the screen you fill out in the gift screen and then craft your own email to the gift receiver and just paste in the link to redeem the gift and then use your own email app delay sending feature (most have them now), to send it whenever you wanted.
When they try to redeem the gift they will be warned that they are already have a membership, as follows:
You are (or have been) a member. If you redeem this membership it will be duplicate your current membership so:
If you current membership has expired, or is about to, go ahead and redeem the gift.
But if you have a annual recurring membership, or a 1 year, or 3 year with a lot of time left, your gift will be wasted. In this case contact the person who gave you the gift and they can either give it to someone else or email us and we will refund them.
